I’m a snacker from way back, that’s a story in itself - a chocolate lover and a human with the knowledge of how the micro nutrients ( vitamins + minerals) affect our body and mind at cell functioning level. After having had disordered eating patterns, I’m also aware of how important for energy and hormone health balancing your protein, carb and fat intake at each meal is (macronutrients) * cue @gratitude_project “how to plate up guide” and webinar in the @health_hub_ program. 🙌🏻 So I crafted these pumpkin bites! Friendly for low FODMAP, SIBO, GF, DF, vegan, refined sugar free - delicious!⠀


Recipe:⠀

1. Melt 50g 85% dark choc @originchocolate from @nombulkfoods or online (stove or microwave) and spoon into a 12 hole mini muffin tray. Place in freezer.⠀

2. Mix 3/4 cup steamed mashed pumpkin, 1/3 cup tahini, 2 tbsp maple syrup or Manuka honey @capilanohoney , 1/4 cup collagen @nutraorganics , and 2 tbsp Turmeric Latte Mix @mynaturesharvest (cinnamon, cloves, cardamom, ginger, nutmeg, black pepper) together in a bowl, to a creamy consistency.⠀


3. Spoon mix into each of the choc filled mini muffin tray holes, and poke a pecan or two in the top of each.⠀


4. Place back into freezer to freeze and store there in a container once frozen. Pull out and eat as desired!⠀


The most tasty balanced whole food treat and snack for any time of the day!⠀
I love Manuka honey for its antibacterial and anti microbial benefits. Collagen for skin and muscle maintenance. Turmeric mix for its anti inflammatory properties. All the above boosting immunity also. 🙌🏻
